
Sweet Cheese Pastry with Orange Blossom and Rose Syrup
Cheese. Sweet, if you can’t find it, Unsalted cheese soaked in water to get the salty taste out
2 Lb Cheese cut into ¾ inch cubes
7 Cups Thin Shredded Pastry Dough, shredded again into fine pieces
Preheat oven to 180C / 350F.
Place the shredded dough in a large pot over low heat. Add 2.5 tablespoons of butter, mixing for 5-10 minutes, if it’s still a bit dry, add another spoon of butter. Sprinkle a few drops of orange blossom water into the dough, and mix.

Gently start spreading the pastry dough in the 11 x 16 pan.
Pressing the pastry firmly till it’s packed. You can press it with another tray to make sure its evenly spread.
Once the pastry is ready, spread the cheese pieces side by side along the pan, leaving a 1/4″ gap around the edges.
Sprinkle the remaining pastry to fill in the border between the cheese and the edges of the pan.
Once the sides are filled, sprinkle the remaining dough above the top of the cheese. Gently pat it so it sticks. It doesn’t have to be firm. Cover the pan with foil, and place into the oven for 45 minutes. Check it at the 45-minute mark, or till its golden
While it’s baking, you’ll can make the rose and orange blossom syrup.
This is a very simple syrup of 1 part sugar to 1 part water, with generous lashings of orange blossom and rose water added at the end
